Do you ever have those days that leave you feeling like a wrung out old rag before the day is over?  Yesterday was a day like that for me!  I was out of town with my son and my dad getting some much needed school shopping done.  We also had to go to the orthodontist and get some groceries.  Yeah, it was that kind of day!  By the time we got home, I was hot, tired, and I wanted to just lay down and be done!  Of course there were things I still needed to do, but I needed a little pick me up.  I whipped up this energy boosting drink for some much needed refreshment and I decided to share it with y’all.

Energy Boosting Drink

Even though I made this in my Ninja blender, it’s not really a smoothie consistency.  It’s more the consistency of one of those nutritional drinks you find in the vitamin aisle.  These are my ingredients.

What’s in that little cup?  Leftover coffee!  It is a rare thing to have leftover coffee in my house, but when it happens, I save it for things like this drink!  The Earth Balance peanut butter is made with coconut oil and it’s my new favorite!  So delicious!  Just toss everything but the chia seeds in the blender plus about 1/2 cup of ice and blend it all up.

The chocolate chip pieces will sink to the bottom, so make sure both servings get some of them!  I may or may not have consumed both servings. 😉  Hey, it was a long day!

Add the chia seeds at the end and stir them in with the straw.  By the time you get to them, they will be just right!
