Time for a recipe!  I haven’t posted one in a while mostly because I don’t cook a whole lot in the summer.  It’s too hot to crank up the oven, so I use the stove top or my griddle.  Simple & fast is my main motto for summer food!  This avocado tuna salad whips up quickly, tastes delicious, & it’s good for you.  What more could you ask for?

Lunchtime Avocado Tuna Salad

Avocados are one of those things that you either love or could live without.  It’s seems there’s no in between.  Although I think if more people could get past its glorious green color they would love it too!

I prefer using tuna in a pouch if I don’t have fresh.  It’s less juicy!  A fresh tuna steak {cooked right} has such a different flavor than processed tuna.  If you’ve never tried it, put it on your bucket list!

The “sauce” does contain the typical mayo but I cut it with Greek yogurt for extra flavor.  I also added some chopped up cucumber because of the fresh crunch it gives.  My husband prefers raw onion which my stomach no longer tolerates.  He also despises cucumber because as he says “It’s like eating water!”.  Lucky for me this is my lunch!

This is the easiest way I know to slice up an avocado ~>

  • Cut it in half, leaving the pit in the unused side.
  • Slice it while it’s still in the skin.
  • Scoop it out with a spoon.

And voila, sliced avocado!

I’m also tossing in a slice boiled egg.  Protein y’all!

Mix the “sauce” with the tuna & top with egg & avocado.  You can really mix all up, but I needed a pretty picture!

I sliced up the rest of the cucumber and mixed it with some white wine vinegar, salt, & pepper.  I’ll let this sit for a bit & have a snack later!  This & a sliced tomato was always served with dinner during the summer when I was a kid.

I topped the other half of my avocado with some lime juice, covered it, & put it in the fridge.  I’ll have this for lunch or breakfast in the next day or two.
